We have friends who moved out of state and said they tried every local pizza place in their neighborhood and it almost ruined pizza for them. They have extra enthusiasm now when they come visit us in Chicago because it's the only time they eat good pizza. Are we Chicagoans just picky eaters? Or have we been raised on such awesome-ly delicious, high quality food, that other places simply don't add up? Well, we set out on a mission to find the answer and here is what we've found.

Once sausage has been pre-cooked and frozen, it loses the delicious flavor, juiciness and grease within it. You are basically left with just a lump of dry meat. Not us Chicagoans! Chicago pizza is famous for using fresh sausage! Because our sausage is fresh and not frozen, it holds all the original flavor and juice. So when we put fresh sausage on our pizza and cook it, the sausage's greasy-juicy-goodness soaks into every part of the pizza. It soaks into the cheese, the dough and even the other toppings. Using fresh, Chicago sausage adds so much more flavor into the entire pizza and to every bite!

Do you know that back in the day, Chicago was famous for its meat packing district? It's true. From the 1800's through 1920s, more meat was processed in Chicago than in any other place in the world.

Chicago's Meat District started in 1865 and for many years Chicago was known as the "hog butcher for the world." For decades, Chicago was also the center of the American meatpacking industry. As pizzeria owners adapted to Chicago life, they used local meat for their sausage. Meat that had been born and raised in Chicago. It doesn't get much fresher than that! Even today, although we no longer have our Union Stockyard, we have a wide variety of free range, Midwest farmers where we still have the opportunity to source fresh, local, meat for our sausage. Pre-cooked, frozen, dry sausage has got nothing on fresh Chicago and Midwest sausage!
